Dr. Frederick Kaufman is the author of Bet the Farm: When Food Stopped Being Food, as well as other books, and has also written for Harper’s Magazine and Slate. He’s a Professor at City University of New York’s Graduate School of Journalism, and has written about food and finance for, at this point decades. In this episode Fred and I talk about the origins and function of commodity markets, what a derivative is, transparency in food markets, commodifying ecosystem services, and money as metaphor, among other things.
